Teriyaki Beef with Stir Fry Asparagus

A quick stir fry that is perfect for a mid week meal. This dish is also great for lunch the next day. Enjoy!
Ingredients:
1 lbs beef strips for stir fry
1 bunch thin asparagus
1/2 cup carrots
1 medium white onion
1/2 cup white button mushrooms
1 cup Teriyaki sauce
1 tsp onion powder
1 tsp ginger powder
Salt and Pepper to taste

10 minutes (plus 30 minutes - 1 hr to marinate)

Directions:
Marinate Beef:
In glass bowl add beef, teriyaki sauce, onion and ginger powder and salt and pepper. Cover and refrigerate for 30 minutes to 1 hour.
Chop carrots, onion, mushrooms, asparagus into large pieces and set aside.
Heat skillet or wok with about a tablespoon of vegetable oil. When the oil is hot add beef in small batches and cook 2-3 minutes or until desired doneness. Remove beef and set aside.
In the same pan, add vegetables and cook for 5 minutes or until softened. Add salt and pepper to taste while vegetables are cooking.
Add beef back into the pan with vegetables and add a tablespoon of teriyaki sauce (new sauce, not from the marinating liquid) Cook another 1-2 minutes for the flavors to come together. Serve.
