Lamb Burger with Caramelized Fennel and Shallots

Description:
The anise flavor of the fennel and sweetness of the shallot works really well with these lamb burgers.  Enjoy!
Ingredients:
1/2 lb. ground lamb
1 medium fennel bulb - sliced into thin rings
1 shallot - sliced into thin rings
Salt and pepper to taste
Garlic powder
Olive oil

Serving size: 2
Prep time: 10 minutes
Cook time: 15-20 minutes

Directions:
Heat about 1 tbsp olive oil over low heat.  Add sliced shallots and fennel.  Salt and pepper to taste.  Cook over low heat for 15-20 minutes until soft and starting to caramelize. 

Form lamb into patties and add salt, pepper and garlic powder to taste.  Cook on a grill or grill pan for 4-5 minutes per side.

To plate:
Serve lamb burger over a bed of arugula and top with caramelized shallot and fennel.  Add thick slices of tomato and fresh cucumber slices.
