Lima Bean and Okra Soup

Description:
I like the mixture of vegetables in this soup especially the okra and fun texture it brings.  The lima beans make this soup hearty and nice for a cold fall day.  Enjoy!
Ingredients:
3 cups re-hydrated lima beans
2 cups okra - sliced into small circles
1 cup string beans - cut into thirds
1 cup tomato - chopped
1 cup celery - chopped
1 cup carrots - chopped
1/2 cup white onion - chopped
1 jalapeno - seeds removed and chopped
1 bay leaf
1 tbsp - tomato paste
1 cup crushed canned tomatoes
32 oz chicken broth/stock (or vegetarian stock)
Fresh parsley
Grated Parmesan cheese
Salt and pepper

Serving size: 4
Prep time: 15 minutes
Cook time: 5-6 hours

Directions:
Re-hydrate dried lima beans according to package.   Use approximately 8 oz. of dried beans for re-hydration.

In a crock-pot, add re-hydrated lima beans, okra, string beans, celery, carrots, onion, tomatoes, crusted tomatoes, tomato paste, bay leaf, jalapeno and chicken stock (or vegetable stock).  Add a little salt and pepper.  You can always add more salt and pepper later. 

Place crock-pot on low heat and cook for 5-6 hours.  Before serving remove bay leaf.  After soup is in bowl add a little chopped parsley and parmesan cheese.
