Mustard Greens Chips

Mustard Greens have a natural spiciness which is mellowed when you slowly dry them out. These chips have a lot of flavor and are easy to make. Enjoy!
Ingredients:
1 bunch Mustard Greens
Olive oil
Salt and pepper

Directions:
Thoroughly rinse mustard greens and then dry (in a salad spinner if you have it). Cut off bottom stem from leaf and then carefully cut out stem/vein that run 3/4 up the middle of the leaf.
Add prepared leaves in a bowl and drizzle a little olive oil and then add salt and pepper to taste. Toss everything so the leaves are evenly coated.
Preheat oven to 250 F degrees. Place leaves onto a baking sheet (one layer and do not overlap.) Cook for 30 minutes till leaves are dry and crisp.
Remove from oven, put on a plate and serve.
